CHERRY AMARETTO BON BONS

1 cup virgin coconut oil, melted or liquid state
3/4 c. Carob powder
1 tsp. Vanilla
1 Pint Luna & Larry's Cherry Amaretto organic Coconut Bliss non-dairy Ice Cream

Blend the oil, Carob powder and Vanilla in a blender or just use a wire whisk. Blend
until smooth.

I buy organic eggs and they come in a clear plastic carton. When the eggs are used I
wash the cartons and use them for this dessert.

Line each section of the egg carton with small candy paper cups.

Use a small melon scooper to scoop the ice cream and place the ice cream in the
cup. Spoon over the melted Carob mixture.

You can also scoop the ice cream and put it in a small bowl and spoon the Carob
mixture in the bowl and turn the ice cream until fully coated. I have done it both ways
and they are both good.

After filling one carton, immediately put into the freezer so ice cream does not melt.
You can see mine melted a bit because I was taking pictures. So get it into freezer as
soon as you can.

Leave in freezer for 15 minutes,  or until the Carob hardens.

I also make Bon Bon pops. I use a larger scooper, the next size up and I stick a
Popsicle stick in the top and put it in the freezer for 15 minutes, or until the Carob
hardens.  They are both great.  Enjoy !!             

Luna & Larry's has other great flavors also. This is the healthiest non dairy
ingredients I have found so far. Let me know if you find one better. I'm always
searching for the least ingredients and the healthiest.
