|YUMMY RAISIN COOKIES
2 1/2 C. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1 c. raisins
1/2 c. grapeseed oil
1 tbs. vanilla extract
1/4 c. honey
In a large bowl, combine the almond flour, salt, baking soda, and raisins.
In medium bowl, whisk together the grapeseed oil, vanilla, and honey.
Add the wet ingredients to the dry ingredients and combine thoroughly.
Make a ball with the dough and then form into a log, 2 1/2 inches in diameter. Wrap
the dough in parchment paper and place in freezer for 1 hour, or until firm.
Remove the log from the freezer. Cut the dough gently into 1/4 inch thick slices with
a wet knife.
Place the cookie slices onto a cookie sheet lined with parchment paper or a silicone
mat. Leave a little space between each cookie.
Bake at 350 F for 8 to 10 minutes, or until golden brown. Let cookies cool before
